From the cold waters of Alaska, The Sansom Street Oyster House is the only restaurant on the East Coast to serve Kachemaks.

Kumamoto Oyster
These oysters are originally from the Kumamoto area of Kyushu, Japan.  The Kumamoto is rich in flavor, almost buttery, and slightly salty.  The finish is sweet, mildly fruity with a light metallic flavor.

Snow Creek Oyster
They are grown near the head of Discovery Bay, which is fed by Snow Creek in the Olympic Mountains.  These oysters enjoy extremely cold, clean, nutrient-rich waters.  Sweet & plump.

South Sunken Meadow
Eastham, MA.  This is a farmed oyster grown using off-bottom culture techniques.  It is grown in waters just to the south of Wellfleet in Cape Cod Bay.  A rare oyster, the farmer only produces about 500 each week as a hobby.  The flavor is medium in brine and very clean.

Stellar Bay is located within Gorge Bay on the West side of Cortes Island in British Columbia.  Stellar Bay oysters are generally quite salty, with a mild sweetness, and a melon aftertaste.
